Mini Lemon Chia Seed Donuts

These lemon donuts remind me of the lemon poppy seed muffins my mom made when I was younger 🙂 lol I didn’t have poppy seeds tho, so I used chia seeds 😀 later, I might make a glaze to go on top of these, stay tuned!


yields 16-20 mini donuts

1 cup dates

1/2 cup plant milk + another 1/2 cup

juice of one small lemon

1/2 cup whole wheat flour

1/2 cup oat flour

1/2 tsp organic lemon extract

1 tsp baking powder

1/2 tsp baking soda


  1. in high speed blender, mix dates, lemon juice, and 1/2 cup plant milk until creamy.
  2. then, in mixing bowl combine all dry ingredients.
  3. mix in the date paste, other 1/2 cup of plant milk, and the lemon extract into the dry mixture until fully combined and clump free.
  4. grease a mini donut pan (if not using non-stick) and fill every mold full, flattening the tops.
  5. bake at 350F for 15 minutes
  6. let them cool and then enjoy!

HEY PEEPS! I am obsessed with waffles right now, so I created some variations for ya!

enjoy! I know I enjoyed eating them XD


I made 3 versions for y’all!




yields 2 waffles


-1 large banana

-1 cup oat flour

-3/4 cup plant milk

-2 tsp baking powder

-1/2 tsp cinnamon

-1 tsp vanilla extract

-2 tbsp ground flax (optional)


1.Blend all ingredients in blender until fully combined.

2.Bake according to your waffle maker’s directions 🙂



1.arrange one chopped banana on top of waffle and a few chopped strawberrys

2.then put some peanut butter in a ziplock sandwich bag, and cut one tip off of it (so it’s like a piping bag) and drizzle all over waffle. if you have a piping bag you can use that instead of a ziplock bag 🙂


1.cut one apple into thin slices, and arrange onto waffle however you’d like (I tried to make them into a flower) can also add some chopped banana and strawberry, if you wish (I know I did XD)

3.then drizzle some pb on dat waffle!

to make chocolate sauce:


1/2 cup deglet nour dates

1/4 cup plant milk

1-2 tbsp cacao powder


1.Blend all ingredients in blender until a smooth sauce forms!









Fruit-Sweetened Blueberry Muffins


Hello everyone! I have re-did my mixed berry muffins from Instagram and have turned them into just blueberry muffins 🙂 they taste better to me. I hope y’all enjoy these!

Fruit-Sweetened Blueberry Muffins

yields about 8 muffins 🙂


1 cup deglet noor dates

1 1/4 cup plant milk

1 1/4 cup oat flour

1 tbsp baking powder

1 tsp vanilla extract

2 tbsp ground flax (optional)

1/2-3/4 cup blueberrys


  1. Pre-heat oven to 350F.
  2. In mixing bowl, combine the oat flour, baking powder, and flax.
  3. Blend dates, plant milk, and vanilla extract in blender until a paste forms.
  4. Slowly stir date paste into dry mixture until fully combined.
  5. Fold blueberry’s into batter.
  6. Line muffin tin with cupcake liners and spoon in batter about 3/4 the way full (optionally you can sprinkle the tops with chia seeds if you’d like).
  7. Bake for 20-23 minutes until tops are firm 🙂


Peanut Butter Banana Baked Oatmeal



Ok, I would like to start this post off by saying that I am addicted to this oatmeal. Like it’s really an issue. I’ve made this stuff 3 days in a row! and for the first two days I ate the whole thing within a few hours or I ate the whole thing in one whole sitting. Today I maintained self control though, only ate half this time 😀 saved the last half for tomorrow’s breakfast 🙂


This baked oatmeal is quickly turning into one of my favorite meals. Mostly because it’s super nummy and really easy to make. I love easy recipes because, let’s be honest, i’m pretty lazy 😀


NOW ON TO THE RECIPE!  I really hope you try it out and enjoy it! 😀

Peanut Butter Banana Baked Oatmeal

Serves 2


1 cup oats

1 cup almond milk (or any other non-dairy milk)

2 tbsp ground flaxseed

1 tbsp chia seeds

2 large ripe bananas

½ cup dates

1tsp vanilla extract

1 tsp cinnamon

Peanut butter (as much as you would like)


  1. Pre-heat oven to 400 degrees Fahrenheit.
  2. Place oats, cinnamon, flax, chia seeds, vanilla extract, and ¾ cup of almond milk in a mixing bowl.
  3. Blend dates and ¼ cup of the almond milk in a blender until smooth.
  4. Pour date mixture into the mixing bowl with other ingredients.
  5. Mash one banana with a fork and add to the mixing bowl, mixing until fully combined.
  6. Pour mixture into a 5×9 loaf baking dish lined with parchment paper.
  7. Bake for 35-40 min in oven, until top is firm.
  8. Once cool, take out of the baking dish by holding the parchment paper, and then cut on a flat surface.
  9. Cut up other banana into thin slices and stack on top of your oatmeal slice.
  10. Pipe peanut butter on it using a piping bag with a small piping tip or you could additionally use a small Ziploc bag and cut one tip off of it.
  11. Enjoy!

Peanut Butter Banana Overnight Oats

Hey peeps! Gosh dang I haven’t posted in a while, I really want to change that. School has been holding me back from posting for quite some time. I usually have homework or a project every week. But hey! it’s  thanksgiving break! so I managed to at least post this.

I am so freaking excited for Christmas! lol I made sure to take a picture of this recipe in front of my Christmas tree. We actually set our tree up weeks ago, which is pretty ridiculous 😀

OK! Now on to the recipe!



½ cup rolled oats

2/3 – ¾ cup almond milk

2 tbsp chia seeds

2 ripe bananas, 1  mashed, the other cut into round slices

½ tsp cinnamon

1 tsp vanilla extract

¼ cup chopped nuts (I used cashews)

2 tbsp. creamy peanut butter (I make my own by throwing a few cups of unsalted peanuts in the food processor for 5 min or so)


  1. Combine rolled oats, chia seeds, mashed banana, almond milk, cinnamon, and vanilla extract in a bowl.
  2. Mix for a few minutes, until the mixture starts to thicken.
  3. In a large cup spoon in about a ¼ cup of the oat mixture, add a few banana slices on top, spread ½ Tbp of peanut butter on the banana slices, and then sprinkle about a tablespoon of crushed nuts on top.
  4. Repeat step 3 until you run out of all ingredients.
  5. Cover cup with saran wrap or a lid and place in the fridge for at least 2 hours.
  6. Take out of fridge and enjoy! 

Chocolate Peanut Butter Nicecream Protein Power bowl



My mom has been constantly telling me that i should stop eating vegan because i am not getting enough protein. She claims that she even thinks my hair is thinning out from protein deficiency (ugh). Well you know what mamasita? Watch me eat this protein power bowl, because it is literally overflowing with protein, AND IT’S NOT FROM ANIMAL PRODUCTS, IT’S FROM THE FREAKING BEAUTY THAT IS PLANTS! 😛

anyways, I went in the kitchen this evening to make some nice cream for dinner and decided, well heck, i’ll go fancy with it! I absolutely love how this turned out!! I chowed it down in literally 5 minutes, it was that good! I wish i would have made a power bowl sooner! I see them online all the time and they always make my mouth water lol 😀


Also, in case you were wondering  what protein powder i used in this recipe, it is Hemp Pro 50 plant based protein supplement. I was searching for a vegan protein powder to get more protein in my diet (hello,mom) and I found this beauty at Sprouts Farmers Market about week ago. It has been AMAZING for nicecream! It is wonderful because it has 15 grams of protein, 2.5 grams of omega 3 and 6, 7 grams of fiber, and NO ADDED SUGAR! Literally the only ingredient in this beauty is raw cold milled hemp protein powder!

Sadly, i am almost out of this already. I got this near my dad’s house in Houston one weekend and now i’m back at my mom’s. Their are like NO health food stores where my mom lives, so finding things like vegan protein powders prove to be quite difficult. Dang i should really move to my dad’s house one of these days 😛


Chocolate Peanut Butter Nicecream Protein Power Bowl


For nice cream:

3 Frozen bananas

1/3 – 1/2 cup Unsweetened almond milk

1-2 tbsp Cacao powder

1 tbsp Natural peanut butter

4 tbsp Hemp Pro 50 protein powder (or any other vegan protein powder)

For topping:

2 tbsp Chia seeds

2 tbsp Ground flax seeds

2 tbsp Hemp hearts

2 tbsp Chocolate Rawnola (

4-5 Strawberries, chopped

6 frozen Blackberries

2 tbsp Unsalted almonds


1.Add nice cream ingredients into a blender.

2.Blend until fully combined, it should have a frozen yogurt like texture.

3.Pour mixture into a bowl.

4.Arrange topping ingredients in any pattern you’d like!
